One of my favorite seasonal desserts is strawberry shortcake!!! :) We have several gardens on our property, in which my mom plants a lot of different vegetables and other plants. And one type of plant we have is a strawberry patch in the large vegetable garden, and it's strawberry season here right now! :)
Everyone has their own favorite ways of eating strawberry shortcake. What's yours? The way we make it at my house is with this biscuit recipe (that I believe came over "on the boat" as they say, from Scotland, w/ some of my mom's relatives) that I thought I'd share:
Preheat oven to 450 degrees.
In a bowl mix
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
Mix these together with a pastry blender.
Add 1/4 cup of margarine (we use Earth Balance, which is like margarine only healthier :)
Mix margarine into dry ingredients with pastry blender until dough is kind of crumbly in texture.
Then, add 1/3 cup milk.
Mix milk into the other ingredients. Stir with a wooden spoon until all ingredients are just mixed together (do not over stir as this will wake up the gluten).
Drop by spoonfuls onto a greased sheet, and bake for about 12 minutes, until biscuits are slightly brown on the bottom.
Makes about 10.
Once you have these biscuits made, you can crumble one or two (depending on how much biscuit you want/how much shortcake you want to eat!!) and top with strawberries. Normally, my mom prepares the strawberries beforehand, cutting them up and adding a small amount of sugar to bring out the strawberry juice. Once you had the biscuit and strawberries in a bowl, if you like, add some whipped cream like we like to do.
And, voila! Enjoy!!! :)
